Chocolate Pumpkin Spice Overnight Oats

Haven’t had the time to fully enjoy fall this semester and bake seasonal treats since midterm season happens to align perfectly with peak fall season. So I’ve been making these chocolate pumpkin spice overnight oats for breakfast most mornings and they are just perfect. Simple and easy with minimal dishes and maximum fall flavor.

Ingredients

1/2 cup oats

2/3 cup milk of choice  

*1 scoop protein powder (optional!)

1.5 Tbsp cocoa powder

2 Tbsp pumpkin purée 

1-2 Tbsp maple syrup 

1/4 tsp pumpkin spice 

Pinch of salt 

Instructions

Combine all ingredients in a small bowl, whisk together until well combined, and transfer to a jar or storage container with a lid. Place in the fridge overnight.

The next morning, remove the lid and give the oats a good stir. Top with your favorite toppings and enjoy!
