Double Chocolate Pumpkin Baked Oats

Ingredients

  • 1/2 cup oats

  • 2 heaped Tbsp cocoa powder

  • 3 Tbsp pumpkin purée 

  • 1/2 cup milk of choice 

  • 1 egg

  • 1-2 Tbsp maple syrup 

  • 1/2 tsp baking powder 

  • 1/2 tsp pumpkin pie spice 

  • 1/2 tsp vanilla extract 

  • Pinch of salt

  • As many chocolate chips as your heart desires 🤎

  • *Optional: 1-2 scoops of protein powder (+ add in a lil extra milk/liquid)

Instructions

  1. Preheat oven to 350F

  2. Blend all ingredients (*minus chocolate chips*) together until smooth 

  3. Mix in the chocolate chips & pour into an oven-safe dish 

  4. Add a few more chocolate chips on top and bake for 25-30 mins

  5. Let cool for 5-10 mins & enjoy!
