Single Serve Gingerbread Cake

When I tell you this may be one of the best single serve desserts I’ve ever made…It has a crunchy layer on top and is so incredibly moist and gooey on the inside, making for a perfect bite every time.

This recipe is adapted from @sweatysweetpotato on Instagram’s single serve pumpkin cake recipe (which is so good as well and you should definitely try <3) 

Ingredients

  • 1 Tbsp unsalted melted butter

  • 1-2 Tbsp granulated sugar

  • 1 tsp molasses

  • 3 Tbsp milk of choice

  • 2 Tbsp whole milk Greek yogurt or sour cream

  • 1/4 cup all-purpose flour

  • 1/2 tsp baking powder

  • 1/2 tsp cinnamon

  • 1/4-1/2 tsp ginger (depending on how strong of a ginger flavor you want)

  • 1/8 tsp cloves

  • 1/8 tsp nutmeg

  • Pinch of salt

Instructions

  1. Preheat oven to 350F

  2. Whisk together the melted butter and sugar

  3. Add in the molasses, milk and yogurt/sour cream

  4. Fold in the flour, baking powder, spices and salt until just combined

  5. Pour the batter into an oven safe dish (I typically use my 5oz or 8oz ramekin but you can also use a smaller oven-safe mug/bowl) and bake for 18-20 minutes

  6. Let cool for 5 minutes and enjoy! (*Highly recommend topping with a scoop of vanilla ice cream and some powdered sugar as well)
